Gado-gado, as previously mentioned as one of Indonesian cuisine, is simply a portion of salad with peanut dressing. This food can be referred as Indonesian Salad. The sweetness of the peanut dressing fuse together with the crunchiness of blanched vegies.
Gado-gado is made of many kinds of vegies, and it will not take much time if you want to try it. Any kind of Asian market should be the place you would want to pay a visit if you have a plan on making this dish.
Basically, blanched vegies + fried soybean patty + fried tofu + hard-boiled eggs + peanut sauce + fried shallots + shrimp crackers = Gado-gado
These are the ingredients that should be on the plate before you pour peanut dressing: chopped string beans, thinly sliced cabbage and cucumber, leafs of Chinese spinach, leafs of water spinach, a slice of hard-boiled egg, thinly sliced fried soybean patty and tofu.
For peanut dressing, food processor will make your life easier. To make the peanut dressing, prepare for 1 cup of roasted peanuts, 1 tablespoon of salt, 2 tablespoons of dried shrimp paste, 3 red bird’s eye chilies, 1/4 cup of palm sugar, 20 gram of tamarind, 1/4 cup of hot water, and 1/2 cup of water.
Once the ingredients for sauce prepared, put everything into the food processor except tamarind, hot water, and water. Let the food processor chews most of the ingredients until all of them spread around like smooth paste. Once the paste is ready, the juice mixture of hot water and tamarind, then pour into the paste. Then, let the food process do the “fining” for another 10 seconds. The last step would be in adding a half cup of water to the paste, and let the food processor mix them well. The sauce is ready!
Plate your dish the way you like, then pour the peanut sauce all the way through the plate. You are your own boss, pour it as much as you want!
Last touch for the dish would be adding wrinkles of fried shallots and shrimp crackers on the top of the dish, and the dish is ready for you feast.
Either hot steamed rice or rice cake nor addition of steamed potato to the dish would be recommended as the source of carbohydrate. Enjoy 🙂
